AUTUMN PUMPKIN BARS Recipe

This yummy delight was submitted by Karla Gorrell who graciously made them for the folks that come to every Monday nite “Games” gatherings at the MOC which start at  4:30. All ranchers are invited to join the festivities of this weekly social event.

AUTUMN PUMPKIN BARS:
Affectionately known as Maureen‘s Pumpkin 🎃 Bars (our dear neighbor and dessert caterer from San Antonio, Texas)

Preheat Oven to 350 degrees
*Spray with Pam …a jelly roll pan 11x15

1 cup oil
2 cups sugar
2 cups pumpkin
4 eggs
Beat these 4 ingredients thoroughly.

2 cups flour
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp salt
2 tsp cinnamon …or 2 tsp pumpkin pie spice
1/2 cup raisins or nuts are optional
Incorporate the flour mixture into the pumpkin mixture and beat for two minutes.

Put the mixed ingredients in your greased jelly roll pan for 25-30 minutes. Cool and spread on the cream cheese frosting… making swirls on top.

Cream Cheese Frosting Recipe:
1 8oz softened cream cheese
1 stick of butter
1 tsp vanilla
1 tsp milk
3 cups powdered sugar
(Mix first 5 ingredients until smooth and creamy and add powdered sugar one cup at a time…I use a little cream if too thick)

This dessert signals autumn for our family and friends and can be eaten at breakfast as well as for a special dessert for a large group.
