Black-Bottom Banana Bars

The following recipe submitted by Laurie Nielsen (includes her adjustments) was a big hit at Game  Night that takes place every Monday at the MOC on Mountain View Road starting at 4:30 PM. It's a great way to use up those ripe bananas.

Ingredients:

  • 1/4 cup butter, softened
  • 1/2 cup sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 3/4 cup mashed ripe bananas (about 3 medium)
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 cup baking cocoa

Directions:

In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Stir in bananas. Combine the flour, baking powder, baking soda and salt in separate bowl. Add to creamed mixture and mix well.

Divide batter in half. Add cocoa to half; spread into a greased 13 x 9 baking pan. Spoon remaining batter on top and, if desired, swirl with a knife to marble batter.

Bake at 350 degrees until toothpick inserted exists clean, about 25 minutes.
